A great, complex Glenallachie that never seems overloaded with sherry. We all know Billy Walker's special barrel management and this is where he hit the bull's eye. The whisky is, in my opinion, a little better than cask #6121. Unfortunately, you don't find this quality very often these days. Clear recommendations!
Nose
The PX lies dark and heavy in the glass. Intense sherry aromas emerge. You have to give the whisky time. After about 15 minutes, cherries and blueberries are added, followed by spices (curry, rosemary). Finally, nutty aromas such as walnuts and almonds join in. The whisky simply cannot hide the age of over 30 years. I am immediately reminded of an oriental spiced tea. After the nose, the anticipation of the taste is great.
Taste
The alcohol is very well integrated, it wonderfully pushes the aroma load forward. The sweetness of the Pedro Ximénez sherry is unmistakable. Then the fruit compote begins, apricots, dried figs, dates, plums. Overall, the taste is very natural, not a wet barrel without any depth. Afterwards I experience a delicious chocolate cake with some vanilla ice cream. Caramel Candies. Roasted aromas reminiscent of hazelnuts and walnuts. At the end, the age shows up again with delicate tannins on the palate.
A thoroughly harmonious Glenallachie that has matured cleanly and complex. I'm actually convinced of the quality. Thank you Mr Walker.
Finish
Aromatic, intense, long. The sweetness of the PX is also clearly evident here. Those with a sweet tooth will enjoy their wares. Of course, after more than 30 years, there are also a few harsher notes, which, however, remain more than reasonable. In the background are mainly dark sherry notes and a pleasant nuttiness. The finish is rather dry with mineral-calcareous hints. Finally, there is a minimal menthol note.
If you compare the price with 30-year-old whiskys from Glengoyne or Glendronach, the bottle is in the contemporary spectrum.
In conclusion, it remains to say that this Glenallachie is an absolute top whisky, without any off-notes or disturbing sulphur.
