The blend is made using only sugar cane from southern Louisiana, which is processed at the oldest family-owned mill in the United States.
The molasses produced is distilled in copper pot stills.
The Batch No. 2 matures for 3 years in Californian red wine barrels, which leads to a rich, fruity as well as full-bodied rum.

Colour: amber.
Nose: oak aromas, figs, red berries, nuances of spices.
Taste: Complex, hints of plums, black pepper, dry oak, earthy aromas.
Finish: Long lasting, spicy, nuances of berries, oak.
