The Holyrood Distillery NOIR Bordeaux Yeast Single Malt Scotch Whisky 47.1% Vol. 0.7 l is an innovative Lowlands single malt Scotch whisky from the young Holyrood Distillery in Edinburgh, which is known for its experimental approach to whisky production.
The focus of this special bottling is the targeted use of a French Bordeaux wine yeast, which already plays a formative role during fermentation and gives the whisky a characteristic aroma structure. This interplay of Scottish barley malt, selected yeast strains and creative cask maturation forms the heart of the distillery's modern NOIR series. The so-called Noir Trilogy tells the story of an unusual combination: French wine yeasts meet Scottish malt whisky and then enter into a classic liaison with high-quality wine casks from renowned wine regions.
Maturation takes place in a combination of ex-bourbon casks and Bordeaux barriques, giving the Holyrood NOIR Bordeaux Yeast Single Malt Scotch Whisky an elegant balance of sweet and fruity aromas. While the bourbon casks add classic notes of vanilla and caramel, the Bordeaux wine casks provide lively red fruit flavors, light acidity and a silky structure.
