Grappa Piemontese is made with Barbera pomace from freshly picked grapes selected by Sibona at the harvest, distillation takes place entirely in-house in copper stills, while aging takes place in stainless steel vats for a long period of time.
A very long maturation, first in medium and then in smaller oak barrels completes this grappa.
