Combining fresh sugar cane juice with our unique family yeast, it is then distilled in a continuous steel column still and carefully aged for 100 months in ex-bourbon oak barrels. Eventually filtered for clarity and colour, this provides an impeccably balanced flavour and begins a new era of full bodied white rum.
