The Isle of Harris Single Malt Scotch Whisky is the Isle of Harris Distillery’s new signature single malt and is bottled at 46 per cent in a 0.7-litre bottle. After more than a decade of whisky production, the distillery in the Outer Hebrides is presenting, for the first time, a permanent core range bottling that bears the name of the island itself. Every step – from distillation through to maturation and the blending of the casks – takes place entirely on the Isle of Harris. The distillates are matured in a carefully balanced combination of first-fill ex-bourbon casks from Heaven Hill and Buffalo Trace, as well as first-fill ex-Oloroso sherry casks. The various cask batches are then blended together for at least twelve weeks to develop additional harmony and depth. The whisky is lightly peated, non-chill-filtered and bottled without colouring. The Isle of Harris Single Malt combines the distillery’s fruity and floral house style with maritime influences from the Hebrides. Butterscotch, delicate floral notes and gentle spices meet creamy caramel, ginger and cloves, whilst the subtle peat smoke elegantly rounds off the character without overpowering the whisky’s freshness. The carefully selected combination of casks gives it a remarkable balance of sweetness, spice and coastal character. Tasting Note

Colour: Gold. Nose: Butterscotch, cherry biscuits, delicate icing, floral notes, fruity sweetness and subtle spices. Palate: Creamy caramel, honey, cloves, ginger, a hint of maritime minerality and gentle notes of peaty smoke. Finish: Long-lasting, creamy and well-balanced with subtle peat smoke, spicy oak and lingering sweetness. The Isle of Harris Single Malt Scotch Whisky reveals its flavours best when enjoyed neat or with a few drops of still water. Culinary pairings include smoked salmon, scallops, oysters, smoked mackerel, Comté, Isle of Mull Cheddar, oatmeal biscuits, shortbread, apple tart, crème brûlée or white chocolate with sea salt.
