Mastic, a fragrant resin from the mastic tree (Pistacia lentiscus), has been valued since ancient times and gives the ouzo a refreshing, slightly maritime note. The unique method of distillation brings out the complexity and balance of ouzo, making it a refined Greek specialty. 

Mastic is produced by drying and hardening the resin balsam that exudes from the bushes or trees. It is traditionally used for various culinary and medicinal purposes and gives the ouzo a distinctive, delicate aroma.
