It is produced at the Erongo Mountain Winery in Namibia, where the climatic conditions allow for a profound influence on cask maturation. After distillation, the single malt initially matures in the producer's own ex-red wine casks. The integration of winemaking and whiskey production under one roof provides particularly direct access to the wine casks used.

Following maturation in ex-red wine casks, the Ondjaba Single Malt receives a final finish in so-called ex-sherry-style casks. This designation is intentionally different from classic ex-sherry casks and corresponds to the producer's specifications.
