Here it undergoes the tried and tested "double ageing" process in discarded oak cognac barrels, a method that has been appreciated since the 18th and 19th centuries.

The careful maturation of this rum combines column still and pot still distillation processes. It begins in bourbon barrels, where the rum matures for a year and reaches an ester content of 42 g/hL.
