Here it is treated according to the traditional "double ageing" method, which is carried out in small, decommissioned oak cognac barrels and has been known since the 18th and 19th centuries for its ability to develop the aromas in depth.

The ageing process of Plantation Rum Guatemala begins with three years of ageing in bourbon barrels, which gives it an ester content of 49 g/hL. It is then further refined for four months in FERRAND barrels before receiving its unmistakable finish through eight months of ageing in red Madeira casks. Bottled in 2023 with a dosage of 15 g/L, this rum is characterized by a particularly rich and expressive variety of aromas.
