The Vizcaya Rum Cask No. 21 VXOP is manufactured by the world famous house of Oliver & Oliver in the Dominican Republic. The family business was founded by Juan Oliver in Cuba in the 19th century. However, the War of Independence and the Revolution forced the family to emigrate to the Dominican Republic and continue rum production there. However, they have retained the original Cuban manufacturing process for their products such as the Ron Cubaney or Opthimus.

The Vizcaya Rum Cask No. 21 VXOP differs from the rums usually produced in the Dominican Republic in that fresh cane sugar juice is used for production instead of molasses. This gives it a fresh, decidedly fruity bouquet.

After distillation, the Vizcaya Rum Cask No. 21 VXOP for up to 12 years in American white oak ex-Bourbon casks. As usual at Oliver & Oliver, the complex Solera process is used for the maturation.

The Vizcaya Rum Cask No. 21 VXOP immediately shows delicate, mild aromas of chocolate, brown sugar, caramel and vanilla on the nose. After some time in the glass, a surprising fruitiness is added, which one would not expect from a Dominican rum at first. Pineapple, green apples, bananas, apricots and red berries emerge and provide a great counterpoint to the initial dark, heavy aromas.

In terms of taste, the Vizcaya Rum Cask No. 21 VXOP an incredibly mild and gentle character. The mouthfeel is extremely oily and covers all taste buds for a long time. Dark, intense notes of first-class chocolate with a high cocoa content, honey and freshly cut vanilla pods immediately create a holiday feeling. These are joined by rather fruity nuances of pineapple, mango and papaya. The finish is long and warming, with hints of tobacco, coconut and Christmas spice.
