The Cotswolds Distillery has been the region's first full-scale distillery since 2014.

In the midst of a postcard idyll, she produces natural, English whiskey in two copper pot stills.

Whose main feature? Fruity complexity.

For them there is none other than Dr. Jim Swan in charge.

Together with the single malt expert, the Cotswolds Distillery created a distillate with a high ester content - among other things through extensive fermentation of over 90 hours and unusual cut points.

The forerun is cut off after just a few minutes in order to preserve the fruity esters in the distillate.

At the same time, the burners make the cut for the after-run earlier than usual, so that none of the heavier, rougher components get into the raw spirit.

The soft, fruity "New Make" is allowed to mature in addition to bourbon barrels, especially in STR red wine barrels made from American oak, shaved, "toasted", "recharred" barrels that are heavily influenced by the raw whisky to interact.

Cotswolds distilled the single malt from 100% local, ground-malted barley.

At 60.6%vol. Alcohol content, the amber-colored single malt unfolds enjoyable aromas such as toffee, oak and red fruits.
