Pearse Lyons Distillery in St James was created by Pearse Lyons (born Dundalk), through his personal passion for the art of distilling and brewing.
The distillery’s two unique Copper Stills are located in the sanctuary of the historically restored St James' Church.
These stills produce a range of small batch whiskey bottlings which are matured in ex-bourbon casks.

Blended from malt and grain, with the distillery’s own produced malt also used as part of this.
