DESCRIPTION
A sustainable red wine. The fully ripe grapes were macerated and fermented whole before aging for 18 months in French oak.
The first traces of Château de Peyrepertuse date back to 806, a legacy of the Cathars who built the citadels of vertigo that still dominate the vineyards today. The Corbières offer an extraordinary geological diversity of schist, limestone and rolled pebbles.
Vinification and ageing.
All grapes are hand-picked. Carbonic maceration lasts from 10 to 18 days for Syrah, and a traditional traditional maceration with total destemming is carried out for Grenache and Mourvèdre. After malolactic fermentation, the different grape varieties are blended and the wine is aged in 225-liter Bordeaux barrels for approximately 8 months. After a light fining and bottling, this wine has been several months before release.

Tasting notes.
The color is a deep, dense ruby.
The nose reveals powerful aromas of mocha and coffee.
The palate is balanced and harmonious, roundness on the attack, ripe fruit aromas and fullness.
This wine is full-bodied and grainy, with a smooth, almost endless finish. almost interminable finish.
