DESCRIPTION
The Kuro Kirishima Shochu is a high-quality Japanese sweet potato shochu (Imo Shochu) with an alcohol content of 25% by volume, bottled in a traditional 0.72-liter bottle. Produced by Kirishima Shuzo, one of Japan's best-known shochu distilleries, this shochu stands for authentic craftsmanship and decades of experience in the production of regional specialties. The word "kuro" means "black" and refers to the use of black koji (kuro koji) in the fermentation process, which gives the shochu special depth and umami.
Made from Japanese sweet potato (imo) and brown rice, Kuro Kirishima has a balanced, rounded flavor profile with earthiness, subtle sweetness and a silky texture. Its body is stronger than that of classic rice shochu varieties, but remains pleasantly soft and accessible. This makes it a popular shochu for both connoisseurs and beginners.
Tasting notes:
Color: Clear.
Nose: Earthy sweet potato, gentle umami notes, slightly nutty.
Taste: Full-bodied, round and soft with a fine sweetness, delicate spiciness and subtle minerality.
Finish: Soft, slightly dry with a pleasant depth and lingering aftertaste.
Kuro Kirishima Shochu can be enjoyed in a variety of ways - classically pure, diluted with cold or hot water (Mizuwari/Oyuwari) or on ice. It is also particularly popular prepared with soda as a refreshing highball, ideal with light dishes. In culinary terms, it harmonizes perfectly with Japanese cuisine such as grilled fish, tempura, yakitori or spicy ramen dishes, as its umami depth elegantly accompanies the flavours. It is also a versatile choice as a digestif or as an alternative to sake for anyone who appreciates Japanese spirits with character and regionality.
