It is made from a blend of rums from Jamaica, Barbados, Trinidad and the Dominican Republic, each aged for between two and three years in ex-bourbon barrels made from American white oak. This careful barrel ageing gives it a base of golden sweetness, oak spice and soft balance. The rum is then given its special signature: the infusion with oak-smoked pepper dulse seaweed, a rare marine plant that is only collected on the Jersey coast at full moon tide.
