Traditionally, the agave hearts for Amatiteña Tequila Añejo are crushed with a tahona and then slowly cooked over an open fire to best preserve the sweet flavors. Fermented with wild yeasts and distilled in copper stills, the tequila develops a harmonious and complex note after 12 months of maturation that delights connoisseurs and novices alike.
