The art of maturation is not just about letting rum sit in barrels for as long as possible. This could sometimes be difficult because, in contrast to ripening in many European countries, the temperatures in Panama are completely different. The proportion of rum that simply evaporates from the barrels during the year is therefore many times higher. As a result, a rum matures 3-4 times as quickly as a Scottish whiskey, but also loses liquid in the barrel correspondingly quickly. To ensure that the barrels are not almost empty after 15 years, the distillery's master blender has to put the barrels of a vintage in a large one at regular intervals Empty the tank and mix. The rum is then poured back into the barrels and can continue to mature in peace, well filled. This guarantees a consistently high and consistent quality of the vintages. With the Malecon Reserva Superior Aged 15 Years, this difference is already apparent on the nose. Wonderfully mild, fruity and spicy. The typical vanilla notes of the oak barrel maturation are also wonderfully woven in. A fine, natural sweetness then develops on the palate, which never dominates and is underlined by the vanilla notes. The fruit note is truly spectacular, which is typical of Rum Malecon at an advanced age.
