The name HØST is the Danish word for autumn or harvest, a nod to the distillery's close ties to regional farming and the quality grains it uses. Stauning makes its whisky entirely in Denmark, from malting and traditional kilning on the malt floor through to distillation in small, directly fired copper stills.

For HØST, whiskies matured in several cask types are combined: first-fill bourbon casks, port casks and new American oak casks. The malted rye contributes a pleasant spiciness, while the single malt adds elegance and a soft, malty sweetness.
